The rejuvenation of Forn de Sant Joan, our restaurant in Palma de Mallorca, is finally complete. Following an all-round refurbishment of the buildings image, including everything from the branding to the interior design of each of its rooms, there was one fundamental element missing which is extremely important to us: the gastronomy. Which is why we have updated a large part of our menu. You have to change with the times. We cannot offer a gastronomic experience centred on contemporary cooking without experimenting and innovating on our coals. The new starters at our restaurant in Palma de Mallorca
To get to someone’s heart you must do it through their stomach, and we know the perfect place to start. We want to suggest our new starters to make your evening spectacular. Our oysters with beurre blanc and grated green apple are a refreshing option and they´re also an aphrodisiac! To complement the intensity of the oysters, we suggest our new mini Russian salad cornet with an anchovy foam. Two options which work great on their own but also form part of our grand tapas innovation which we are offering on our new menu.
Contemporary tapas, gastronomic innovation
Our selection of contemporary tapas hosts a unique and different concept so that you can continue enjoying our culinary creations as always, but without getting bored of the same dishes. We want to present our dishes, something fresh, such as our beetroot salad, grilled pepper, tomato, strawberries and nuts, as well as classics like our leek and Iberian ham croquette with red tuna, or our exclusive macaroni with truffle and parmesan, caviar and egg in tempura and our Mallorcan reinventions such as our stewed eel with espinagada gnocchi and grilled ramallet tomato. We also want to surprise you with fusions of land and sea with our parmesan ravioli stuffed with squid, sobrasada and asparagus or our exquisite sautéed octopus with onion, a fennel cream and garlic crispy potatoes. And also gift you with the pleasure of trying a classic dish with an explosion of flavour tones: mini Iberian pork burger with a sunflower seed mayonnaise, Mahón cheese and leaf mustard.

Our restaurant in Palma de Mallorca has renewed its arsenal of dishes with creations like our monkfish with lobster sauce, grilled bimi and a soft coffee air or our wild sea bass with sautéed spinach and a seaweed foam.
