A more Mediterranean menu, designed to be shared
We have before us one of the most significant changes to our menu that we have ever seen. Using high quality produce as our premise, we have aimed to create a more Mediterranean menu. Also, all of the dishes, whether they be meat or fish based, have now been designed to be better shared amongst diners. A great example of this is our red mullet tartar. Tartar is usually paired with citrus, but on this occasion, we have formed a dish with a more Mediterranean touch. The pickled red mullet is accompanied by an intensely flavoured tomato water and some croissants. A fresh dish accompanied by a high fat bread which makes a very interesting combination and is perfect for sharing amongst different diners.
The meat dishes amongst our tapas selection in Palma de Mallorca
In regards to our meats, which are of the highest quality, we now have new succulent dishes such as our oxtail on toasted brioche, Jerez mayonnaise and grated truffle, an excellent free range roast chicken cannelloni and mushroom carpaccio and an impressive marinated Black Angus entrecote, with caramelised shallots and a yellow aji puree. These creations are joined by other equally special dishes like our Iberian pork mini burger, sunflower seed mayonnaise, Mahón cheese and mustard leaves. If on the other hand you prefer the flavour of a great fresh fish, we have prepared creations for you like our fried San Pedro john dory tacos, salsa verde and fried onions, an incredible sautéed octopus, red wine caramelised onions, crispy potatoes with garlic and green mole sauce or a mini cornet filled with seabass and langoustine ceviche with a coconut foam. We also have land and sea creations like our delicious leek and Iberian ham croquette with red tuna.

Our previously mentioned selection of tapas in Mallorca is complemented by starters like:
- Beetroot salad with roasted peppers, tomatoes, strawberries and nuts
- Stewed eel with spinach gnocchi and roasted Ramallet tomato
- Parmesan and squid stuffed ravioli with sobrasada and asparagus.
- Scallops with a cauliflower cream, mustard and Iberian ham sauce
- Steak tartar with mustard and fresh herbs
And for our larger and staple dishes at our restaurant in Palma de Mallorca, the main courses:
- Marinated tuna tataki, tomato tartar and avocado yoghurt
- Grilled monkfish with lobster sauce and sautéed bimi
- Grilled wild seabass, sautéed spinach, light red wine sauce and a seaweed foam
- Suckling pig confit with rosemary, sweet potato in different textures and an orange ice cream
- Suckling lamb, Palo jus with black garlic, aubergine, turmeric dust and a lemon and mint gel
- Beef tenderloin with vegetable and potato ragout and foie gras sauce
